  2.   APPLE-CELERY SALAD

  4. 1/4 Cup Mayo
  5. 2 Tbl. Cognac or other Brandy
  6. 2 Tbl. Prepared White Horseradish
  7. 2/3 Cup Chilled Whipping Cream
  8. 4 Celery Stalks, chopped
  9. 2 Red Apples, halved, cored, chopped
  10. Chopped Fresh Chives
  11.  
  12. Combine first 3 ingredients in medium bowl.  Beat cream in large bowl to stiff peaks.  Fold cream into mayo mixture.  Add celery and apples.  Stir gently to combine.  Season to taste with salt and pepper.  Sprinkle with chopped chives and serve.
